Bathhouse managers stood at the peak of this hierarchy. There was Jeanne Saignat, called around 1460 ‘the finest maquerelle in Dijon’, who reigned for 20 years over the bathhouse of St Philibert. She had good backing: a fun-loving husband, a brother who was a priest, a protector who stood in good grace in the ducal court, and several lovers. She enjoyed going to see ‘the charming activities taking place in the chambers’, and she boasted to young men and priests, even in public, of the ‘tasty flesh’ (chairs de haute graisse) that she had to offer in her stews, promising all a fresh supply daily. Futrthermore, she was ‘enchanting’, and good enough company to have maintained the friendship of two ‘women of estate’ who came to her house for their assignations. She was also intelligent enough to feign indignation when she had led a new servant girl into prostitution. Her girls stayed with her because they owed her money, and for 20 years she laughed at the city echevins – when they were not among her clients.
